Carly Kozak

Anyone who knows me well, knows I love to travel. I love experiencing new people and the exciting cultures they share. When an opportunity to head up to Jackson Hole presented itself, I could not resist. We decided to surprise my best friend, Nicole, with a trip up there for her 21st. She has always wanted to stay in a cabin up there, but we are poor. So finding a place to stay was pretty difficult. All the cabins we were looking at were around $300-$400 a night. I wasn't going to spend that much money on a cabin. So we went on AirBnb. My favorite travel website in the world. You can find the best places to stay for super cheap. I highly recommend using it. I have yet to have a bad experience. The place we stayed out was so adorable. It was a cozy blue condo located just outside of Jackson in Driggs, Idaho. It was beautiful. We stopped off at a few trails along the way and took pictures. I literally have never seen a place more beautiful in my entire life. Getting to experience a new state with my best friends was the greatest experience. I think my husband realized he was in trouble and married a girl full of wanderlust. See you again colorful trees, and delicious sweet potato fries.

Its officially my favorite season! AUTUMN. There is just something about pumpkin candles, light sweaters, cozy blankets, and rainy walks that makes me get giddy inside. I decided I would share a pre-view of my Fall inspired apartment (excuse my laundry on the floor). I am going to go all out on decor when my local pumpkin patch opens up. Then our house will be filled with tiny pumpkins and fall inspired typography. I am also planning on decorating our porch with Spooky/chic items for Halloween. I hope we get some trick or treaters this year! So stay tuned for all of that plus a Fall Haul I will be doing the second week of October. This will include all of my favorite candles, lotions, and other decor I pick up over the next two weeks. All the items shown bellow are from Target, the Dollar Tree, and Walmart. I like to start my holiday shopping at these stores because you can save a ton of money. They actually have some really cute decor that will help you start a foundation. Seriously though I am obsessing over this mug, head over to your local target and purchase one! They are only $5. Also, as you can tell I have already used up some of the candles I just bought and will need to replace them soon...oops ;)

I have always been the youngest out of all my friends. I got my driver's license after everyone. I graduated at 17 and still had a curfew. I went on my mission after everyone else and got married the youngest out of all my friends. 21 felt like a huge milestone for me because I am never going to be behind again. There are no more age requirements I need to accomplish in order to be an adult. From now on my young age will only come to my advantage ;) So Happy 21 to me! Also a special thank you to my sweet husband for making me feel like a millions bucks.

When Taylor went to BYU, I would make trips down to see him almost every other weekend. We would walk around campus, have picnics and go to our favorite snow cone shack. This shack isn't like any other, it is place is amazing. I never really enjoyed snow cones growing up because I always felt like the ice turned hard. Our snow cone shack is like a flavored powdery heaven. Whenever we are in Provo we always make sure to stop there and enjoy a delicious frozen treat. This summer in Rexburg we were driving around and saw our favorite snow cone shack. IN REXBURG. So obviously we stopped and enjoyed a giant Strawberry Daiquiri and Pina Colada snow cone. It was so much fun getting to experience our favorite Provo treat in Rexburg. We go to sit down and reminisce over all our long distance and pre-mission memories. Thank goodness those days are over. I love being able to hang out with my T every single day.

Normally I am opposed to any sort of cloud or precipitation during the Summer, but today I was so excited when I looked out the window and saw rain everywhere. I had been dying of the heat and was so excited for a day where I could stay inside and catch up on some of my favorite things. I hurried into my closet, put on my favorite sweater, made some hot chocolate, and listened to Taylor play my favorite songs. I hope the rain stays for a few more days so I can keep wearing sweaters and indulging in comfort food. Then I'll be ready for sunshine, snow cones, and floating the river.

Summa, Summa, Summa-time. I have never been more excited to end a semester of college. I can finally kiss my days of sociology research goodbye, and say hello to floating on the river drinking lemonade. Anyone who knows me well, knows I am a complete and total summer girl. Growing up in Southern California made me a lover of sun kissed cheeks, mermaid hair, sandy toes, barefoot adventures, sunscreen skin, and frozen everything. To celebrate my favorite time of the year I wanted to share my must have items for this Summer season:

Happy Fourth! This year we took a road trip to Utah, reunited with the Kozak family, ate at the best snow cone shack on earth, ventured around BYU, road tripped back to Rexburg, tired Famous Dave's Barbecue, encountered an overly enthusiastic waitress, went to a Chukar's game, and endured some sunburns. All in all, it was perfect. Hope your Fourth was full of family and food like mine was.

This last weekend Taylor's family invited us to go to Santa Barbara with them. Even though I was recovering from the stomach flu and Taylor had to work a night shift the next day, we decided to tag along. There was no way we were going to let a free vacation slip through our fingers. It was just what we needed before the hectic week ahead. The resort was beautiful, the food was amazing, and the town was perfect. There is nothing I love more than sunny skies, trolly rides, and state street adventures. Thanks for the good memories SB. See you soon!

Got a sweet tooth you just can't satisfy?
I know how hard it is (being a sugarholic) to eat 1..or 2.. or 3... or 8 calorie filled treats and feel immediately guilty afterward. Why does chocolate taste so good!? To help curve your craving, try my Skinny Strawberry Sorbet with my favorite Homemade Granola.



Homemade Granola:

2 tbsp Sliced Almonds
1 tbsp Chia Seeds
6-8 Organic Banana Chips
Handful of cornflakes
2 tbsp of Oats





Place ingredients in blender and blend to desired texture. (I like mine powdery).
If you are using a Nutri-bullet, be careful, it blends up pretty quickly. You might want to pulse instead of puree. 



It should come out looking something like this:



Skinny Strawberry Sorbet:

8-10 Frozen Strawberries
1/4 cup Coconut or Regular Water
2 squirts Lemon Juice (optional)
1/2 cup of Ice (add more as desired)
1 tbsp Honey





1. Freeze 8-10 Strawberries
2. Measure out Water and Lemon Juice
3. Pour all contents into blender
4. Add ice as desired for thickness 



Your Skinny Sorbet should come out looking something like this:



Now mix the two together and you'll be in for a sweet treat. 



Feel free to save your extra Granola to enjoy with some greek yogurt later this week. It can be stored in your cabinet or your fridge! For some an extra sweet kick, add some shredded coconut to the batch.  Happy Healthy Eating!
